Parents and teachers: what do you do with the Halloween candy mountain?

Every year my kids come home with a pillowcase of candy that weighs about as much as they do, and every year my classroom is a sugar-fuelled disaster for the first week of November.

Options I've heard: let them eat it all in a week and get it over with; ration two pieces a day until Easter; the 'switch witch' who swaps the candy for a toy overnight; or 'donate' it to the parents' secret stash, which is what my parents did.

What's the house rule at yours? And do other countries even have this problem, or is this a uniquely North American disaster?
